Chicken is one of the most commonly consumed proteins in India. So, it isn’t really a surprise that there is a mindboggling variety of chicken recipes to be found across all states. RJ Vijaya invited Umesh to show us a very easy but very delicious method of making Chicken Fry for this edition of Active Cooking.
Umesh uses lots of onions (of course), along with cardamom, clove, homemade ginger-garlic paste, tomato, coriander, and curry leaves.
As the onions sizzle and crisp up in the pan, Umesh gets talking about her school life. She recalls being teased by the boys in her school for wanting to play with the girls. A taluk-level Kho Kho player, she wished to be part of the girls team but was forced to be in the boys team instead. Teenage years were the hardest as she was confused about her gender identity, but she kept trying to be happy. One of the ways of doing that was competing with her friends in rangoli-making.
Meanwhile, the chicken is cooking up to be delicious. Umesh suggests using a thick pan placed on a low flame to enhance the taste. Once the chicken is done, serve it with that best of accompaniments – rice!
